This is an easy recipe, made healthier by using pasture-fed chicken and as many organic ingredients as possible.
HONEY BALSAMIC CHICKEN
NOTE: If doubling the recipe, double the ingredients indicated with the *. You can prepare this ahead of time and keep in the fridge until ready to bake.
- *4 pieces chicken breast (or 1 chicken cut into quarters)
- 1 medium red bell pepper, cut into 1″ cubes
- 1 medium yellow bell pepper, cut into 1″ cubes
- 1/2 lb. mushrooms, cut into quarters (use more if your family fights over them, as mine does)
- 14 1/2 oz. can diced tomatoes, drained
- *3 T. olive oil
- *2 T. balsamic vinegar
- *1 T. fresh rosemary
- *1 t. coarse salt
- *freshly ground black pepper
- *1 1/2 t. honey
Heat the oven to 400*. Rinse the chicken and pat it dry.
Place chicken in a large shallow baking dish. Toss remaining ingredients and pour over the chicken, making sure the chicken is well covered.
Bake until the chicken is cooked through, about 50-60 minutes.
