Parmesan Garlic Chicken
Just the words “parmesan” and “garlic” sound great together, don't they? This is a really easy recipe (my favorite kind), and a quick, flavorful chicken dish that's super yummy as leftovers, too, so be sure to make extra! The next day we had it on chicken sandwiches with my homemade mayo; and for sandwiches, try my mayo one of these three ways. (By the way, have you seen this post on how to thicken failed mayo? It happens to the best of us!)
I threw this into the oven with my favorite vegetable dish these days (I know it's weird but you have to try it!): Roasted Brussels Sprouts!
Parmesan Garlic Chicken
Ingredients
- About 3 pounds chicken breasts cut in half length-wise if they're thick (that way they'll cook faster and more evenly) If you don't have a local source for safe/good-for-you chicken, you can buy it online here.
- 2 eggs
- Butter for greasing your pan or use parchment paper
- 1 cup shredded Parmesan
- 1-1/2 Tablespoon garlic powder
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
- 1/2 teaspoon fresh or dried thyme
- 1/2 teaspoon fresh or dried oregano
- 1/2 teaspoon fresh or dried basil
Instructions
- Beat eggs into a dish with a flat bottom. Dip chicken breasts into the egg mixture and place into a buttered large baking dish (or use parchment paper). Mix together the Parmesan, garlic powder, sea salt, pepper, and herbs and crumble the mixture over the top of the chicken. (You could also just sprinkle these ingredients each on top separately.) Sprinkle a little more sea salt and pepper over the top. Bake at 400* for 20-25 minutes until chicken is no longer pink inside.
