Before today’s winner is announced, check out this short video from when John Wood, founder of U.S. Wellness Meats, went to New York City and spoke at Brgr restaurant: “All of this is what cattle are designed to consume, no grains, no need for antibiotics, growth promotents, or hormones…this is the type of environment that these cattle have had since birth and will have through their entire lifetime. The meat they talk about in that video from is a powerhouse of nutrition. I tell people often that I love eating pastured meats and fats because not only are they not bad for you, like conventional meats and fats are, but they’re actually packed with nutrition and SO good for us!

Remember that beef tallow is a healthy cooking fat when it comes from animals out roaming around on grass. It’s similar to lard (pork fat), only from beef instead of pork, and has many uses. It’s great for frying anything, and for using in recipes for baked goods. Even better, grass-fed tallow is a also great source of Omega-3′s (the omega 6:3 ratio is similar to fish!) and cancer-fighting CLA. And as I explained in my last post, when I priced it, I figured out that if you buy the large 5 gallon tub, it’s even cheaper than rendering it yourself!

I have tried to purchase some since you announced your contest and told us about it and they have been temporarily out of stock since that time and still are. How can they be offering a discount when they don’t have it in stock? I would really like to purchase some, do they know when they will have it in stock? Dona
Dona – Our apologies for the frustrating shortage! Our meatcutters are a bit behind this month, however we did add a few more 5 gallon tallow buckets to the store recently in case you still need to place an order.

John (USWM owner) also emailed me this response:
“Tallow demand has been blinding for most of the year. We get one turn a month to have it made from our fabricator and this is the week. We doubled last month’s request. We hope to have a batch in stock early next week. Tell the customer we will honor any discounts if they call the order in after the discount is off.”
We have area butchers, but they cannot guarantee that the fat I would get would be organically raised. Is using lard/tallow still better than other options even if it isn’t assured to be organic?
My advice would be, if you can’t get quality lard or tallow locally, then order it online from USWM. As I said before, the big tub is even cheaper than rendering it yourself!
Otherwise, you could cook with butter or ghee or coconut oil (expeller pressed has no flavor), depending on what you’re making.

Just a question: is the 15% discount on the tallow only or on other products too? Because there are several other things I’ve been drooling over on the site that I would be thrilled to use the discount on too.
