Herb cheese

This Italian Herb Cheese Dip is so flavorful, and I love how nutritious it is, too.  As much as I’m always trying to get more probiotics into the kids, I was kind of hoping they wouldn’t like this too much so there would be leftovers.  They were all over it, though. :)

This recipe is adapted from an article by Jen Allbritton in Wise Traditions.  Read more there about the health benefits of probiotic foods.

Italian Herb Cheese

  • 1 c. yogurt cheese
  • 1 c. sour cream
  • 1 t. garlic powder (or fresh garlic)
  • 1/2 t. sea salt
  • Fresh or dried herbs of your choice (basil, thyme, rosemary, oregano, etc.)

Mix together until smooth.

For a good appetizer:

Heat your favorite organic pasta sauce and pour over the top of the dip.  Use whatever dippers you’d like:  crusty bread, organic crackers, or try the homemade soaked crackers recipe in Nourishing Traditions – they’re pretty easy and really good.  I’ll post the recipe one of these days after I make them again.

I had to call my husband over to see the picture of your yogurt-filled cheesecloth hanging from the chandelier. See?, I said. Things could be worse! Thanks for the laugh! I made my first yogurt cheese yesterday and got a small mason jar full of whey in just a few hours. I was so excited; my family is humoring me I believe, nodding and ahhing over this jar filled with a kind of sickly yellow liquid. Anyway,I made some cream of broccoli soup this afternoon and plopped in a spoonful of the yogurt cheese, and it was great. But I’m really glad to find a few recipes here to use the rest of it. Next is reading what to do with all that whey. Thanks for the tips!
