Easy Breakfast Burritos – Back to School Nutrition

We’re back at it tomorrow. School begins in the morning, for families around here anyway, and we’ll need some easy, healthy breakfast ideas. (Also see the post, 10 Healthy Breakfast Ideas. Take a look at this easy breakfast idea from my sister, Gail – full of protein, veggies, and healthy fat – what a great start to give your kids in the morning!

Breakfast Burritos

  • Soft whole wheat Tortilla Shells (make sure they don’t have trans fats or a ton of preservatives, OR make your own!)
  • Scrambled Egg (eggs are so good for you!)
  • Veggies of choice (local and organic are best)
  • Optional: Ham, sausage, steak, or bacon (where to find healthy meat)
  • Cheese (only raw or all-natural cheese, no velveeta or processed “American” cheese slices!)

Stir fry meat and veggies in butter, scramble in the egg, top with cheese until melted then put in a warm tortilla shell. Serve with salsa. (My comments above in italics…)

    you should really rethink any pork products including lard and bacon , it is very BAD, never meant for human consumption, no matter how you burn it it doesn’t kill all the bugs in pork.Not only does God tell us in the Bible not to eat it lots of nutritionists say that as well.even Kevin Treudau.

    Hi Jodell,

    I have also heard that same concern from some in the past (The Maker’s Diet for one), yet others (Weston A. Price Foundation) say it is healthy as long as you only eat pork from a farm where the pigs are raised out on pasture and not fed any junk.

    Personally, we do not eat it a lot, only now and then, and only grass-fed pork.

    I’d love to hear from others on this topic, too.

    I think pork is fine, and like anything eat in moderation. But than again we raise hogs, so of course I like it. :) We are very careful what we feed our hogs. The are what they eat, to a sense. If they are fed junk it will effect the meat. We are also careful about what type of hogs we raise that also makes a difference. Our pork has very little fat. We ate very little pork until we started raising hogs. I think finding a good source it what is important. We love breakfast burritos. I make up a large batch of eggs and meat and freeze it in ziplock bags. I can than take it out and we use it on tortillas. It saves time to do it this way.

    That sounds delicious! It reminds me of a breakfast my Mom used to make, which I loved and should try myself. She would cook rice and then stir-fry it gently in butter, and add scrambled eggs and diced ham. Super breakfast, and a great way to use leftover rice, which she usually did.

    Hi Marina,

    I’m not too sure about using Kelloggs cereals in recipes – most are full of not-so-good ingredients. Which recipe were you looking at there?

    I love the idea of fried rice for breakfast, because you can add (& hide:) so many goodies in there. Butter, or even better bacon dripping, with fried eggs, shallots, cooked chopped vegies, bits of leftover meat, are all fair game for fried rice!
