Baked Garlic Green Beans with Parmesan Crumb Topping
This Baked Garlic Green Beans recipe originally came from Taste of Home, but I'm sure it won't surprise you to find out that I changed some things to make it healthier. The original recipe also called for 1 1/2 t. cider vinegar, but I didn't think that sounded good, so I've always made it without and we love it. It is such an easy side dish and one I use often if we're having company, because it can be made up ahead of time, I love that!
Baked Garlic Green Beans
Ingredients
- 2 Tablespoons Olive oil
- 1 teaspoon fresh or dried onion
- 2-3 cloves minced fresh garlic or dried garlic Do this to your taste. We like a lot around here
- 1/2 teaspoon sea salt
- 2 dashes of pepper
- 1 pound green beans preferably local and organic, cut into bite sized pieces and then toss to coat.
- 1/4 cup bread crumbs It's still good if you omit this part, by the way. Otherwise, throwing your bread ends into the food processor is a good way to get bread crumbs fast.
- 2 Tablespoons fresh grated or shredded Parmesan cheese
- 2 Tablespoons melted butter pastured butter is best
Instructions
- Mix first 5 ingredients together in a bowl. Toss the green beans around in the mixture. Transfer to a buttered 9×13 baking dish. Combine last 3 ingredients and sprinkle over the beans. Bake uncovered at 325* for 20-25 minutes or until heated through.

Wanted you to know that I plan to try your lovely dish at this Thanksgiving dinner. I’m on tap to bring the traditional green bean casserole, but I couldn’t bring myself to do it, given the nasty ingredients on the Campbell’s label (even the Healthy Request one)! I don’t have any organic or homemade cream soups on hand, so I searched my recipes and found YOURS! Am excited to try it! Am wondering: how many does this recipe serve and does one pound of green beans really fill a 9 X 13? Happy, happy Thanksgiving!!

OK, it’s been a while since I made this, so I can’t remember for sure how much this fills a 9×13, I’m sorry! (It def wouldn’t hurt to go with 1 1/2#.) BUT, you might want to wait because Monday morning I’m posting a recipe for homemade traditional green bean casserole with HOMEMADE shoestring crispy onions and homemade creamy mushroom soup, fun huh???!

Amber, yes I’d thaw and dry them first or your whole dish will be soggy-ish. (I thaw things under my hot water tap and then drain well on paper towels.)

The glass in the bulbs seem so much thicker than the others that I would think it would take much more pressure to actually brake it. The other incondencent bulbs have such thin glass that if broken the glass slivers and is very hard to pick up
There are (were) mercury in vaccinations and seems silly to worry about mercury on the floor rather that in the body of a little one. The article was very good explaining the long run effects . ThanX

This sounds really good! I’ll have to get some green beans at the Farmer’s Market next Saturday and try it!
BTW, my husband works with CFL’s and regular ones, too, daily and has for over 14 years. He has no concerns about the mercury in the bulbs, even if they break in the house.
