You've often heard me mention my good friend Meg (she and Joe used to live next door but now they live a mile away), and for today's post she let me film her showing us how to make cauliflower bread, which she uses in her daily grilled cheese sandwich or her to-die-for pizza crust!
She is doing a ketogenic diet, not just because she thinks she had some belly fat (which she doesn't), but also because of the cancer in her family. Since there is a lot of diabetes in my family, Meg has inspired me to give it a go too (sort of — definitely not as strict as totally keto — I'll explain more about what I'm doing lately, along with how I fast for health reasons too, in an upcoming post).
(Remember that “eating keto” is basically just a very low-carbohydrate diet, low enough so you stay “in ketosis” which means your body is using up your fat for fuel instead of using the carbs you're eating as it normally would. This has been proven to bring about fast weight loss AND help with so many health conditions like diabetes, epilepsy, cancer, Alzheimers, and more…)

- Just make your tea, let it cool down a bit, then add the ACV and lemon juice. Meg swears by this and says it keeps her regular every single day! She did say that this part is important: encourage brushing because of the acid and how harsh it can be on your teeth. I always try to brush as soon as I’m done or within 20 minutes of drinking it.

Also, just wanted to reply to some questions I’ve been getting from readers about why the cauliflower isn’t turning out wet for them…
From my experience it’s either because the cauliflower is too old OR you maybe didn’t process it small enough.
BUT it still works fine for me, just skip the wring-it-out step, mix with the eggs and spices and make your bread!

These were my favorite videos EVER! I watched both. I love Meg and wish she was my neighbor!
So, I’ve been trying to follow a ketogenic diet for approximately 10 days and I love how I feel, I love losing 4 pounds, but I cannot, for the life of me, ever imagine myself squeezing the liquid out of cauliflower and making an omelette and calling it a grilled cheese sandwich. I’m fearful of becoming sick of eggs — although, I’ve been eating a hardboiled egg each morning and so far so good.
I would have thought you’d hired actors to play the handsome husbands, but then I saw the way Kent held that beer, and I knew he was the real deal.
Keep us posted on the ketogenic lifestyle, lots of conflicting information out there. I agree with Meg and the hard part is really embracing the fat.

Liz Ferguson — too funny about the guys. 🙂 About the cauliflower. I processed mine but not as finely (more “rice” size) and it didn’t end up wet, so I just made it into bread in the same way and it tasted pretty close to hers without all the ringing, FYI! The cookbook mentioned above has a “Mac and cheese” recipe using cauliflower that looks so good!

Also Liz Ferguson — I guess it’s pretty common for people to still be leery of embracing healthy fats, but for some reason I’m SO over that and LOVE my fats. I think it’s because they taste so good and I just know, after all these years, how good they are for us. (Sarah) Costco now has a brown rice cauliflower pasta combination. I have not tried it and don’t know if I will but someone might want to. This is the Costco in Kentwood.

Kelly the Kitchen Kop I did the Atkins diet about 20 years ago and easily lost about 15 pounds and kept off ten of it until menopause hit. I’m thinking its time to try it again. I only need to drop about ten pounds so my clothes fit me again. The thing I liked about that diet was that I wasn’t hungry at all. I have cut out sugar, but am having trouble losing. Menopause really sucks!

The Atkins diet was, to my understanding, a high fat/high protein, low carb diet and it didn’t emphasize quality when it comes to food sources, whereas today’s ketogenic diets are usually high fat, moderate protein (not as high in protein as Atkins) and low carb (and more specific so that a state of ketosis is established and maintained). They also tend to emphasize the importance of quality and source of foods (organic/pasture-raised, real, whole food, avoiding GMO industrial vegetable oils and fake chemical sugars, etc.). There’s a primer on ketogenic diets on Mercola’s site or Wellness Mama has a good post too, just search online. (If I put a link here it pulls a HUGE picture that shows up in every future comment…ugh…)

Keto is high fat low carb and moderate protein opposed to Atkins where more fat & protein and little carbs are consumed. On keto you are not going to stress your kidneys consuming too much protein plus too much protein throws you out of ketosis.
