This sloppy joe sourdough subs recipe makes a lot to feed a hungry family.
I just made this recipe up one day and it turned out so GOOD! Leftovers are tasty too, and good thing because of how much it makes–my family devours it in one sitting, but yours may not. The cream cheese layer makes this extra delicious, it's my favorite part, and very similar to my sloppy joe noodle bake.

Sloppy Joe Sourdough Subs
If your family loves sloppy joes, these sloppy joe sourdough subs will surely be a hit as well!
Servings: 8 or more people
Ingredients
- 1 batch of this sourdough bread recipe, use the jump link there to take you quickly to the recipe. (OR just find a loaf of french bread at your store with a not-too-bad ingredient label.)
- 16 ounces cream cheese, softened. (I use organic if I can find it.)
- 2 cups sour cream
- 1 Tablespoon chives or green onion, finely chopped (this is optional but adds nice flavor).
- 1 teaspoon garlic powder
- 1/4 cup milk or cream, more or less to get it a nice consistency for spreading.
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- 1 Tablespoon butter or bacon grease
- 1 onion, chopped
- 2 pounds ground beef, we get it from our local farmer, but if you don't have a good local source you trust for grassfed meat, you could get it online here.
- 1.5 teaspoons sea salt
- 1/2 teaspoon pepper or so
- 2 -6 oz. cans tomato paste
- 1/2 cup ketchup or tomato sauce, I use organic
- 1 Tablespoon mustard
- 4 Tablespoons maple syrup (omit for low-carb)
- 8-10 Tablespoons butter
- 6 cups shredded cheese, either mozzarella or cheddar are both good
Instructions
- Work on the different components of this recipe and once those are all ready, just put it all together...
- Start the night before or early in the morning to feed your sourdough starter, and begin making one batch of this sourdough bread recipe <-- use the jump link there to take you quickly to the recipe.
- Once your dough is done, separate it into 4 equal pieces. Shape into french loaves (skinny-ish loaves about 12-13" long), and place on a parchment-lined baking pan. Let rise (it'll likely take a few hours, depending on how warm your kitchen is), then bake at 400* for 15-20 minutes or until nicely golden brown. Cool, then slice in half so you'll have 8 pieces.
- Mix together the sour cream, cream cheese, milk, chives or green onion, garlic powder, and salt and pepper. (I use a handheld blender to mix.) Taste-test to see if you need more salt and pepper. If It's too thick to spread, add a bit more milk.
- For the sloppy joe meat, first brown the onion in a little butter or bacon grease in a large frying pan for a few minutes until soft, then add the meat, salt and pepper, and stir it around until done and browned. Add the tomato paste, tomato sauce or ketchup, mustard, and maple syrup, stir well. Taste-test to see if it needs more of anything.
- Preheat the oven to 350* and now put it all together: butter each piece of bread well. Spread the cream cheese mixture on equally between all the pieces of bread. Spoon the meat mixture on top of each. Sprinkle on the cheese. I always try to cover the edges of the bread with the toppings so they don't get too brown or burn while baking.
- Bake until hot all the way through, about 15 minutes or so depending on your oven and how hot your meat mixture was when assembling. You can also turn your oven to broil to get the cheese extra melty and golden.
