“It is time once again for me to purchase 1/2 a side of beef from a friend of mine. This time, though, I want to be sure to get all the “good stuff” that comes with it. I already get the oxtail but was wondering about other items (more bones, fat, etc.) that I might ask for this time. Any suggestions?“

A while ago I caught on that to get awesome prices on the things we use (which most consider trash but for some reason cost tons at the farm) I went straight to the butcher. I was able to score bones, suet, hearts, livers for .65 a pound not $3-6 a pound at the farm. We just butchered our own cow and they already knew I wanted it all. We got back all her bones, suet ,heart, tongue, shanks, oxtail, & liver. I just cant do brain and kidneys yet. the crazy part is I know I need to go back and get some more heart, liver, & bones.

Make sure to also ask for the sweetbreads when butchering beef.
The chicken “organ” labeled as stomach in the picture above is actually the gizzard and not the stomach. The gizzard is nothing but a muscle and is great eating if cooked long enough to tenderize it.

I always ask for all the organs, and all the bones. “Soup bones” are always included as part of the package, but the ones usually thrown away are referred to as “dog bones”. At least that’s what it said last time on my invoice. I would just be clear that you want ALL the bones. It will be enough to keep you in beef stock all year long!
Last time I asked for all the organs, I received tongue, heart, liver, kidneys and oxtail.
You could also ask for all the fat trimmings to render tallow. I haven’t done that yet, since I purchased a large container of tallow previous to getting my beef. I will probably ask for the fat trimmings next time.
