Paleo Pancake Recipe
The best part about these pancakes, besides that they're grain-free and only take about 2 minutes to whip up, is the way they get all crispy on the edges, just like “real” pancakes do, so they're satisfying and yummy. Oh and they're full of protein, too.
I use organic peanut butter, and if I have it I love these soaked nut butters, they taste really good, and since the nuts are soaked before grinding, some of their phytic acid is broken down and therefore won't bind with the minerals in the big glass of raw milk that tastes so good with this recipe, so we can absorb those minerals instead. This doesn't call for much, so you could just as easily grind up your crispy nuts for homemade nut butter and use that.
NOTE: The recipe below calls for peanut butter, and a commenter corrected me: “Please note that peanut butter is not allowed on the Paleo diet, as it’s a legume and not a nut. You can use almond butter instead, or no nut butter at all. I use shredded coconut in my banana pancakes.”
Paleo Pancake Recipe
Ingredients
- 1 banana
- 2 T. nut butter find soaked nut butter here
- 3 eggs
Instructions
- Start by mixing the following together ( I use my handy dandy Hand Blender).
- Next, drop spoonfuls into a cast iron pan to fry on the stove; use plenty of butter, ghee or bacon grease. (OR if you're lucky enough to have a big Stainless Steel electric pan like I have, you could make a whole bunch at once in there). Fry 'til golden brown on each side. Enjoy!

I made these for breakfast but I used egg whites (it’s all I had in the fridge) and they were definitely a close second to regular fluffy pancakes! (I would say they were better but I’m not sure if I’m just excited that I found a good substitute)

Do you also make pancakes with soaked grain?
There is a restaurant where we eat sometimes that makes french batter pancakes. I think the difference is that they are made with extra eggs. Do you have a recipe?
