Oh it’s a doozie this week reader friends! Last Friday it was our turn to host bible study. I was short on time, as always, but I figured I could throw together an apple cake easy enough. I put the ingredients in my Bosch and all was well until I made the mistake of adding in frozen apples. Not smart. The dough turned into the thickest hardest hunk of glob you’ve ever seen. There was NO stirring anything into that. Surely it was a temperature issue, I thought, so I warmed some milk to add to it. That’s when I had to cry uncle – look at this, it was NOT mixing up and it was hard on my Bosch to keep flopping that hard mess around. It was soooo sad, because of course it was a double batch of ingredients wasted and my TIME! The dough tasted good, too, so I know it would’ve tasted really good, darn it.
So I called our local baker, who uses real butter and cream in her cakes, thankfully. She whipped one up for me and I picked it up later that afternoon. I had her just put real whipped cream on top so I didn’t have to worry about any weird stuff in the frosting.
So that’s my disappointing apple cake adventure.

I've since pulled off a yummy gluten-free salted-caramel apple cake!

Of course I didn’t think of that great idea!! Although the dough was REALLY hard, but I probably *could* have flattened it good with my hands……..

Funny enough I was making a honey apple cake last week for my sis-in-law’s bridal shower and as I was whipping it up I misread the ingredients and added 2 teaspoons of salt instead of baking soda – totally forgot the baking soda and was only supposed to have 1 teaspoon of salt. I realized this after divvying the dough into cupcake cups and putting the pan in the oven. Needless to say, not many were eaten at the shower, but THANKFULLY it didn’t deter my husband from eating 6 of them within 10 minutes the next day!

I was thinking along the same lines as Sarah as well. Surely the dough must have been salvageable it would have just had to be done by hand. Thanks for sharing your stories! I experimented last week with rye sourdough and I almost felt like I wanted to cry the dough was so sticky and I knew it would be going in but I thought I was prepared. It luckily did work out and came out really good, but in those moments I definitely feel almost like crying. haha But I am most definitely a crier anyway so it doesn’t mean much! 😉

I would have dropped the dough into some coconut oil and made little fried apple dumplings!
