My husband is Finnish, so I asked my in-laws for viili starter. In “Nourishing Traditions” she dicusses Piima milk and cream. The old Finns call it viilipiima (for cultured milk) and kermaviili (for cultured cream). I made viilipiima earlier this week, and it has a wonderful honey-like texture and I reserved half to make cream cheese. I made the kermaviili yesterday and was ecstatic and how delicious it is! Imagine a rich, sweet and slightly tangy sour cream. If you have not tried it, you simply must. It is way too easy and way too fabuloso not to! Thanks for letting me brag on Finnish food!
