I’m soooo glad it’s Wednesday. These weeks during harvest time are so very long. But it’s how we end up with a packed freezer and pantry, so I’ll only complain just a wee little bit. This week, I’ve got a great recipe for a delicious finger food, topped with a slice of fried apple and a sage leaf, then crisped in a piece of prosciutto – all of the best flavors of autumn in one delicious bite
It was too hot to do ANYTHING today… so I made ice cream. Healthy ice cream- with real eggs and real milk and maple syrup…
My post this week is a new blog about S510, since the senate may vote on S510 this week before they leave Washington.

I shared my handcut baked fries. I recently bought a potato/vegetable cutter. It takes seconds to cut the taters into fries now! So much healthier than the frozen kind, not to mention you can season them however you want.

I launched a new series called Eat to Learn! I’ll publish some of the research I dig up while writing fun food facts connecting food on the school lunch line and a kiddo’s brain for morning announcements at our elementary school. Granted, there is limited real food on the school lunch line, but for 70% of our students it’s what they eat. My goal is to increase participation and consumption of the items that are available and do provide nutrients like fresh produce, beans, eggs, etc.

Since the Real Food For Rookies class this week focused on healthy fats I thought it would be a good time to try some new recipes. Sadly my fish fry was a total flop. The coating fell off the fish and shrimp but they both still tasted great! We skipped eating the coating though. The cultured butter however was a huge hit so that is the recipe I submitted to this weeks RFW. My oldest daughter helped me. The whole time we joked about the Fabio commercial for I can’t believe it’s not butter and if the people who ate it knew what they were missing. This butter is just that good. Wednesdays are my favorite day of the week. We get our CSA and our co-op delivery of fresh, raw milk, meat and just about anything else we need to eat whole, healthy and delicious. It’s also my day for food inspiration–and believe me, with a family that eats zero processed food, I can use all the inspiration I can get!
