Does anyone else in the GF crowd miss beef and barley soup? I used soaked short grain brown rice as a substitute for barley, and the soup came out beautifully. Of course, the grain component of the soup is only a supporting actor to the real star – homemade beef bone broth!

Does anyone have a good recipe for sprouted grain tortillas? Or could recommend a brand? Posting stuff to Real Food Wednesday always makes me think about ways I could do more, ya know?
I don’t have a sprouted tortilla recipe, but have an overnight tortilla recipe that everyone loves. The flour is soaked and uses whey and coconut oil.
Overnight Tortillas
4 cups freshly milled flour
1/3 cup coconut oil
1 tablespoon sea salt
1 cup water
1/2 cup whey*
1/8 teaspoon yeast
Combine and place in greased bowl, covered with cellophane or another greased bowl, place on counter, overnight.
In the morning, pinch off walnut sized balls of dough and roll out thinly on floured pastry cloth. Bake on un-greased iron skillet, turning when slight bubbles appear. Turn and cook very briefly and remove to damp cloth-covered plate.
Tips:
1) Thoroughly saturate pastry cloth with fine flour to make a non-stick surface.
2) Roll dough very thinly with small-diameter rolling pin.
3) Bake rapidly on un-greased iron skillet.

I think about 16 fajita size tortillas or 10-12 larger ones. Everyone I make these for loves them, they don’t even taste like whole wheat

I needed to take a moment to share some thoughts about Natural Cures, the book by Kevin Trudeau.
Today’s post was inspired by having a good time at my local farmer’s market on Saturday, and wanting to boast about local businesses.
