Recently I had another one of those crazy days when I forgot to think about dinner until 3:00. Thanks to a suggestion from Shauna, one of my favorite readers, I was rescued.

I went to the freezer and pulled out a pound of Chorizo (a yummy type of ground sausage) from Creswick Farms. I ran hot water over the package so I could get it out easily, and put it on low in a cast iron pan to slowly brown it up. When it was no longer pink, I added in a can of (Meijer brand) organic refried beans “with roasted green chile and lime”, stirred it up good and served it on tortillas with all the goodies…sour cream, salsa, lettuce, green peppers, cheese, onions, whatever you like. The chorizo was too spicy for the younger kids, so I made them some cheese quesadillas in the toaster oven, and everyone was happy.

I just LOVE fast & easy meals that I can pull off so late in the day.

By the way, you could also make your own homemade refried beans using Shauna’s refried beans recipe, which sounds great.
