Green Bean Casserole with Homemade Crispy Shoestring Onions

Green bean casserole
- 2 pounds green beans (rinsed, ends trimmed, cut into 1" pieces, and steamed 'til bright green and crisp-tender, drain & dry on paper towels)
- 3-4 cups homemade cream of mushroom soup (or GF recipe below)
- homemade crispy shoestring onions (recipe below)
Homemade GF cream of mushroom soup
- 4 Tablespoons butter
- 1 pound mushrooms, sliced
- 1 medium onion, chopped
- 4 Tablespoons arrowroot flour
- 2-3 cups whole cream
- Sea salt and pepper to taste
Homemade crispy shoestring onions
- 2 large onions, halved, thinly sliced and separated
- arrowroot flour or regular all-purpose flour
- Beef tallow or lard, enough for deep frying
Green bean casserole
Preheat the oven to 400*.
Stir green beans and soup together and pour into a buttered 9x13 baking dish.
Top with shoestring onions and bake until bubbly, about 20-25 minutes.
Homemade GF cream of mushroom soup
Saute mushrooms and onion in butter until the onions are just beginning to brown.
Add 2 tablespoons of arrowroot and mix all together.
Add cream, stir at low/med heat until it begins to thicken.
Add salt and pepper to taste.
Remove from heat and use as is or use a stick blender and blend until smooth.
Homemade crispy shoestring onions
Toss onions slices in flour (enough to cover) and fry in the beef tallow or lard until golden and crispy.
Remove from the fat and place on paper towel, sprinkle with sea salt.
