Grain Free/Gluten Free Chocolate Black Bean Brownies

This is a yummy treat for those trying to watch their carb or grain intake.

  • Preheat oven to 350*. 
  • Lightly butter an 8×8 square baking dish.
  • Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish.
  • Sprinkle the chocolate chips over the top of the mixture.
  • Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

Notes

There are 256 carbs in the whole batch of brownies, so how many per serving depends on how many you get out of the 8x8 pan.  If you get 16, then that's only 16 carbs per brownie, not bad!
If you could cut the sugar to half, then there are only 156 carbs in the whole batch.  If you got 16 pieces, then that's only about 10 carbs per brownie!
