Ham and Cream Cheese Roll-ups (or an easy DIP)

I love the zing of the onion or twang of the pickle alongside the salty ham and creamy cheese.  Mmmm.  And these always go fast at get-togethers because most everyone likes one or the other, so you may want to make a lot!

Ingredients

  • About 2 dozen pieces of sliced ham — we get it from our pasture-based farmer or find safe, healthy meat online here — it's not always easy to find ham from the farm that is sliced right for this recipe, SO hopefully you have a good butcher nearby who sources from pasture-based farms, we have TWO now, yay for the growing real food movement! So you could just go there and they'll slice it however you'd like. You want it thin enough to be able to roll it up, but not so thin that it breaks easily.
  • 2 packages of organic cream cheese
  • About 2 dozen green onions or dill pickles sliced, depending on how thick you want them, about the length of the piece of ham that you're rolling it in. The only problem is that ALL pickles at the grocery store have rotten preservatives, so be sure to remember to grab some when you're at the health food store, or make them yourself to avoid the chemical cocktail. Anyone have a good homemade pickle recipe to share?

Instructions

  • Here's how easy it is:  Spread the cream cheese on a piece of ham and wrap it around green onions or dill pickles.  I've never tried sweet pickles, I wonder how those would be?
  • You could then cut these ham and cream cheese roll-ups into bite sized pieces and stick a toothpick in there to serve on a platter, or leave them rolled up with part of the onion hanging out, like you see pictured above.
  • Note that if your ham is a bit moist, you may need to dab it with a paper towel so the cream cheese won't slide all over and will spread more easily.
  • That's it!
  • DIP variation:  If you don't have anyone who is eating low-carb, you could turn this into a simple dip.  Just soften the cream cheese and stir in the chopped up ham and green onions or pickles.  Serve with your favorite crackers.
