Fudgy Cream Cheese Brownies
These will be your new favorite brownies!

- 23 ounces chocolate chips (a little more or less is okay) --used separately (I use a kitchen scale since the amounts are so random)
- 10 Tablespoons butter, softened
- 6 ounces organic cream cheese, softened
- 1 1/2 cup cane sugar or coconut sugar --used separately (I use some of each)
- 5 eggs – preferably from a local farm with pasture-fed chickens
- 1 cup + 2 Tablespoons all-purpose flour-- used separately –I use unbleached white AP flour or einkorn flour.
- 2 teaspoons vanilla extract --used separately
- 1 teaspoon baking powder (aluminum-free)
- 1/2 teaspoon sea salt
Melt 8 ounces or so of chocolate chips with 6 Tablespoons of the butter over low heat in a medium saucepan. Whisk until smooth. Set aside to cool.
Preheat oven to 350*.
Cream remaining 4 Tablespoons butter with cream cheese until smooth. I did this in my Bosch mixer. Gradually add 1/2 cup of the sugar. Cream until light and fluffy. Add 1 of the eggs, 2 Tablespoons flour and 1 teaspoon vanilla, mix well. Transfer to a bowl and set aside.
Now back in the same bowl, mix the remaining 4 eggs until light and fluffy. Gradually mix in the remaining 1 cup sugar. Continue mixing until thickened. Stir in the baking powder, salt and remaining 1 cup flour. Add to this the cooled chocolate mixture and mix in with the remaining 1 teaspoon vanilla. Spread half of the chocolate batter into a 9x13 buttered glass baking dish. Spread the cream cheese mixture over the top. Then drop the remaining chocolate batter by tablespoons over the top of the cream cheese mixture. Swirl through batter layers with a spatula or knife for a marbled effect. Bake in a preheated 350* F oven for 35-40 minutes. (I pulled it out when it was soft on top and felt almost set, but not too firm so they don't get dry on the edges.)
Sprinkle the remaining 15 ounces or so of chocolate chips around the top after the brownies come out of the oven–they melt nicely then just spread them around with an offset spatula so they're now a yummy frosting.
Cool in the pan. Cut into squares. A little homemade whipped cream on top is dreamy too!
