Parmesan Garlic Chicken

  • About 3 pounds chicken breasts cut in half length-wise if they're thick (that way they'll cook faster and more evenly) If you don't have a local source for safe/good-for-you chicken, you can buy it online here.
  • 2 eggs
  • Butter for greasing your pan or use parchment paper
  • 1 cup shredded Parmesan
  • 1-1/2 Tablespoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon fresh or dried thyme
  • 1/2 teaspoon fresh or dried oregano
  • 1/2 teaspoon fresh or dried basil


  • Beat eggs into a dish with a flat bottom.  Dip chicken breasts into the egg mixture and place into a buttered large baking dish (or use parchment paper).  Mix together the Parmesan, garlic powdersea salt, pepper, and herbs and crumble the mixture over the top of the chicken.  (You could also just sprinkle these ingredients each on top separately.)  Sprinkle a little more sea salt and pepper over the top.  Bake at 400* for 20-25 minutes until chicken is no longer pink inside.
