Butter a 9×13
glass baking dish and place cod fillets in the bottom, cutting pieces to be evenly sized. (So they're all done about the same time.) Season fillets with
sea salt and
pepper (lemon pepper is
really good!) Then mix together with your
stick blender: cream cheese, salt and pepper to your taste, garlic and the zest and juice from your one lemon. Spread the cream cheese mixture over the fillets and bake at 425* until fish is flaky (done!) – about 30 minutes.
