Guess what I did all weekend? I whined, stomped my foot and said a few bowling words. I’ve got more computer issues that I won’t bore you with, but my Monday Mix-Up isn’t as full as normal today.

Hi Kelly- I don’t have a computer yet or much time for this, but praying to Christ about every problem or aspect in your life is solution I find & answers come if you follow the Acts with God- Adore, Confess, Thanksgiving & Supplication. Good Fortune! I went to my 42nd high school reunion. I read how (true story) a Mom embraced her newborn who had been declared dead after 2 hours of trying to resucitate by Drs. & when she & spouce told the nurses etc.. the babe was moving limbs, opening eyes etc.. they would not believe or come to their side till she said she had enough time to hold & say goodbye to her dead baby! When the Dr. came & saw the child, of course it was declared alive & a miracle!

I can’t help with the computer issues. When I have problems with mine I have to wait for DH to come home and fix it, which he’s doing right now. I couldn’t get online. He is working on that one and I am finally looking at the email on his laptop.
I wanted to tell you that I had great success baking a sourdough cholla on Friday. I know you call it Friday Flops so I was going to call it Saturday success even though I really made it Friday. This is the first time I tried this recipe from sourdoughhome.com. It is a braided cholla. I was so proud I took a picture of it. I wanted to post the pic here but I don’t know how to do that. You can look it up on the website. Mine looked just like that.

Here you go, Heather!
Dough:
1 cup plus 2 T. milk, warm
3 T. oil
2 whole eggs, lightly beaten
1/2 cup sugar (I used sucanat)
1 cup oat flour
1 cup buckwheat flour
2 cups GF all purpose flour ( I used Bob’s Red Mill)
3 t. xantham gum
Filling:
1 cup brown sugar or sucanat
2 T. cinnamon
1/4 cup butter, soft
Icing:
1 t. milk
1 1/2 cups powdered sugar
4 tbsp. butter, soft
1 t. vanilla
Put dough ingred. into bread machine in order given. Run on dough cycle. After dough cycle is finished, roll dough into 12×18 rectangle, spread with 1/4 cup butter and brown sugar/cinnamon mixture. Roll up length-wise and cut into 12 rolls. Place into 13×9 pan. Bake at 325 degrees for about 25 minutes. Spread icing on them as soon as they come out of the oven.

I made the Nourishing Traditions soaked pancakes using 3/4 spelt, 1/8 wheat, 1/8 rye, and I use coconut milk + whey as the soaking medium (plus vanilla). Sooo good.
I also baked this honey apple cake with some honeycrisps that my mom had given me: https://www.healthhomehappy.com/2010/09/honey-apple-cake.html That was also excellent! It tastes just like an apple version of banana bread or pumpkin bread. I replaced the clove with nutmeg though. I love the smell of clove, but not so much the flavor.

About your banner… I don’t know HOW I missed your giveaway of the textbook :(. I’ve had that tagged for highschool health and tagged on my wishlist.
I was sick last week (still am) and discovered that a big beef bone can give you continuous bone broth for a week and still have some color in it. It was so nice to have the crock pot on and be able to scoop out a cup at all hours – even 3 am many nights.
Hope you get your computer glitches fixed – I don’t have much patience with inanimate objects!

Kari, I can tell yo one I would definitely avoid. Goya. I swear they are one of the companies who cut their oil with a cheaper oil. At one point there was talk in my state (Connecticut) of making olive oils label if they do that, since they’re often cut with nut oils and thus the allergy worry. I don’t know what ever came of that.

Sorry I haven’t looked into which less expensive brands are better, because I’m pretty sure that as with anything, you get what you pay for… Maybe someone else has looked into it?

No, I haven’t posted about it yet. That will be coming in a few weeks. I plan to do these regularly–though probably shorter in duration because 4 days starts to interfere with my social life! And it completely made my husband uncomfortable because he felt like he couldn’t eat either since I wasn’t! LOL So I might stick to doing more frequent 24-hour fasts instead.

I am hoping one of your lovely readers will have a suggestion for a good bok choi recipe I could make up tonight. The one time I made it before I used the recipe from How To Cook Everything. It was good, but had peanut oil, and I just got a proverbial kick in the pants to boost omega-3 consumption so that is out.

I took a cinnamon roll recipe and made it gluten free, and made it with natural sugars. (well, except for the icing!) 🙁 The whole family LOVED them, begged for more, AND my tummy never hurt from eating them! (like it does with gluten)

I hosted a grain-free, dairy-free, paleo book club gathering. And I also liked the food-system-balls article. Kinda reminded me why we were eating zucchini so many times a week (because it’s the most readily available, cheapest veggie at the farmer’s market).

Oh, and I dug my neglected sourdough starter out of the fridge and began feeding and caring for it again. It seems very happy and it’s bubbling up to show me how excited it is to be out on the counter again! 🙂

I made my sourdough pancakes this morning with Scottish oatmeal added to the starter and leftover potatoes added to the batter, and served them with yogurt, ginger carrots and a grate of pepper! I’m used to cooking one-pot meals this way, a little of this and a little of that, whatever is on hand — but it was a very liberating sensation to be improvising with a type of bread, where careful measurements, leveled teaspoon-fuls etc are more the norm.
