My friend, Jeanne, gave me a couple great suggestions for fast meals that her family loves.
1. EASY MAKE AHEAD PIZZAS:
Ahead of time, make pizza dough and bake the crust for the first half of the baking time (15 minutes), let cool and cover well. If you'll be eating it within a day or two, you can leave it on the counter, otherwise freeze it. Also ahead of time, get all your toppings ready and in the frig, or freezer, depending on your time frame. You could even put your toppings on and freeze that way.
If frozen, allow time for the crust and toppings to thaw, but once thaw, it will take only 5 minutes to assemble the pizza, then bake 15-20 minutes. A fast, healthy food! Much healthier than frozen pizzas than you can get at the store!
2. MAKE AHEAD CALZONES:
Make pizza dough, grab out baseball sized pieces of dough and roll into a ball, and then roll out fairly thin on a flour-dusted counter top. Put your desired toppings inside (ideas at the above pizza dough post), pinch the edges, then wrap up in parchment paper, and put into freezer baggies. Freeze to bake later for a nice after school treat or a fast dinner. When you pull it out of the freezer, give it enough time to thaw (2-3 hours), rise a little (another 2-3 hours?), and bake (350* 15-20 minutes or 'til golden). Jeanne's son said, “These are better than Hot Pockets.” What a compliment from a teen!
Another way I do these to make them easier to heat up: After assembling, let rise, and bake 10 minutes only, and then freeze the same way explained above. When kids need a quick after-school snack (you'll just need to think ahead a little), defrost 10 minutes or so in the toaster oven, and then bake 'til golden brown (10-20 minutes?), brush with melted butter if desired.
