Ham and Cream Cheese Roll-ups – a Low-Carb Snack That’s Always a Hit

PHD-cover-front1-198x300I almost didn’t post this ham and cream cheese roll-ups ‘recipe’ because there’s not much to it, and they’ve made an appearance at soooo many get-togethers in my life that I thought everyone might already know about them.

Just in case there’s someone out there who does not, or if you need to be reminded of an old favorite, here you go…

So lately I’m doing the low-carb thing again to lose a few pounds.  I was motivated by the book, The Perfect Health Diet, which I’m finally getting around to reading.  I’m only part-way through and low-carb isn’t exactly what it’s about, it’s actually very different in some ways and makes a lot of sense, but I’ll write about all that soon.

For now, though, I wanted to share one of the easiest and tastiest low-carb appetizers ever.  (See my complete list of low-carb meal or snack ideas here.)

Here’s how easy it is:

I start with sliced ham from our pasture-based farmer, spread on homemade yogurt cheese, organic cream cheese or cilantro ancho-chili lime mayo, and wrap it around green onions or dill pickles.  I’ve never tried sweet pickles, I wonder how those would be?

That’s it.  And these always go fast at get-togethers because most everyone likes one or the other.

The only problem is that ALL pickles at the grocery store have icky preservatives.  So be sure to remember to grab some when you’re at the health food store, or make them yourself to avoid the chemical cocktail.  Anyone have a good homemade pickle recipe to share?

By the way, these ham and cream cheese roll-ups would be great to bring to a Memorial Day picnic this weekend!

    Oh yes, I’ve had those before and had forgotten, thanks for the reminder!

    I also like a tomato wrapped in with the green onion. :)

    I am glad you are reading the book. It’s tough going at times, I know. It makes me so mad that Komen considers “cancer research” to be drug development with sponsors being makers of unhealthy food, when so much is KNOWN about cancer. Do make clear to folks that it’s not really a diet book only in the sense of weight loss. It’s about HEALTH. The blog is great too. They ask for recipes and Sou Ching is doing a book to be released by Christmas, I think. Hope I am not making that up!

    Its pretty good with sweet pickles as well. You can pretty much put any veggie combo in and it’ll be yummy; bell peppers, butter lettuce, fermented green beans, it’s all good.
