I ordered my Mandarins (oh my gosh these were SO good last year and we were really sad when the box was gone – check out one way we ate them: chocolate fondue!), and I also got us some olive oil (LOVE that stuff), but personally, I’m not into curing olives.  It’s odd but as much as I love olive oil, I can’t stand olives, so I’m certainly not going to mess with curing them.  Yes, Kent loves them and a good wife might try this…  Not gonna happen.  Sorry babe.

hehe…I’m with you, Kelly, on the olives. I hate olives (but LOVE olive oil!), but my husband loves them, so I briefly considered ordering some of the black olives when I placed my order last week for the olive oil. Until, that is, I started looking up how to cure them….yeah, it looks like a heck of a lot of work for something I don’t even eat. So, unfortunately for him, no olives…:-)

Someday I want to take a vacation and visit Chaffin Family Orchard. I have a relative fairly near them, so some day I might stop by. But I do have a question- how long will a gallon of olive oil stay good? Is there a way to keep it fresh, because we don’t use all that much.

I think cold and dark is the best way to keep it. Not sure how long though because we go through ours pretty fast. :)

Since olives are a once a year crop any olive oil worth it’s weight should last at least a year if stored properly. Heat, light, and air are olive oils biggest enemy. For most people their pantry would be sufficient for storage. However, the safest thing to do if you really want to be sure that your oil won’t go bad is to transfer it into smaller glass containers. Mason jars or well cleaned out wine bottles work well and then you can transfer them in the fridge. Keep one in the pantry though because the ones in the fridge will solidify after a few days and it takes a long time to thaw them out to be able to pour the oil out. I’ve never had anyone tell me ours has gone bad and certainly not in less than a year. A lot of the ability for the oil to keep has to do with how well the olives were treated and how quickly they were made into oil. The longer they sit as olives off the tree the faster all those anti-oxidants dissipate. We make ours into oil within hours of harvesting the olives.

Hi Chris – thanks for the tips about storing olive oil – I just pre-ordered a gallon from your site. Was it you I was having the conversation with about the wine coolers for oil storage? They are small, inexpensive (you can get a decent one for around $100 or even less), and keep healthy oils at a good temperature for keeping them fresh, but not too cold. I don’t like having to let the olive oil warm up and soften if it’s been in the fridge, as in, when I mix it with vinegar and other ingredients for salad dressing.

Here’s a link to a smaller wine cooler – you can buy larger ones too, but this one is only $125. Great idea, huh? And the temperature range goes from 50 to 64 degrees F – perfect for keeping oil at a good temperature so it won’t go rancid, but not too cold.
