Baked Garlic Butter Fish with Cilantro Lime Brown Rice

You guys are going to LOVE what we had for dinner Saturday! I made this fried fish and homemade pesto recipe only this time I baked the fish and I used limes instead of lemons, because I wanted to make a cilantro lime brown rice to go with it. (I loooove the cilantro lime rice at Q-Doba and knew it couldn’t be that tricky.) Baking the fish was MUCH easier because you could throw it in the oven and let it bake without standing over it. These flavors made us feel like summer is here! And HEY, check out that picture above, I took that! For REAL!! I’m getting a little better, eh?!

Are you single and broke, but want to eat well? My niece lives on her own in Seattle and has asked for help in trying to eat less processed junk. She does eat a lot of eggs (they’re good for her, cheap and fast), but usually falls back on pasta and boxed dinners too often. I suggested she buy a whole chicken since she can get a lot of nourishing meals out of that, but I need MORE IDEAS from you!! I hope you’ll help. :)
