This is one of those “perfect” recipes because it’s so flavorful AND easy! I pulled it together in about 5 minutes the other day with veggies from our garden, so it has a super fresh taste. I gave you rough measurements – use however much you’d like, and then try it and add more of whatever it needs.
Kitchen Kop’s Summer Salad
- 1 or 2 Tomatoes, chopped into bite-sized pieces
- 1 or 2 Cucumbers, chopped into bite-sized pieces
- 1 celery rib, chopped very small, if desired
- 1/2 – 3/4 c. feta cheese, crumbled (we like a lot)
- Olive oil, visit my resources page for quality brands (start with 1/8 – 1/4 c.)
- Pomegranate balsamic vinegar (start with 1/8 – 1/4 c.)
- Sea salt (start with 1/2 t.)
Mix everything together, starting with a small amount of olive oil, vinegar and salt. Taste test, and add more if needed. You’re done!

Your salad sounds delicious! We have received a lot of beautiful, colorful cherry tomatoes and basil in our CSA box for the past 2 weeks. I have been cutting the tomatoes in half, adding cubed, grass-fed, organic mozzarella, and chopped basil. Then I drizzle a little olive oil and balsamic vinegar on top. Such perfect summer flavors… we love it!

This is a recipe that I learned about a couple of years ago at a Weight Watchers meeting. We like to add red onion to it as well. This salad is a staple in our summer diet.

My mom used to make something like this when I was growing up. I couldn’t appreciate the flavors and fresh veggies back then but I most certainly can now. I’ve never tried pomegranate balsamic vinegar but it sounds great – I’ll have to try that sometime.

Sound yummy. I live in Ecuador so we have all kinds of fresh vegetables all year round. I haven’t prepared this exact recipe but usually improvise something similar. My son gets organic cucumber at breakfast almost every morning, since it’s one of his favorite veggies (and so easy to prepare).

My favorite salad contains cherry tomatoes, cucumber, bell paprika in red, yellow and green, one onion, a bit of garlic, organic buffalo mozzarella, a handfull of fresh-picked herbs, and a dressing of olive oil and apple vinegar, served well cooled with pita bread or combined with some pieces of chicken in a wrap.

I tried a new salad this week-end that was great! Sliced tomatoes with fresh corn kernels, sliced avocado, finely chopped jalapeno, chopped cilantro with a dressing of lime juice, olive oil, garlic and salt and pepper.

Michelle, I just got it at our local grocery store (Meijer) – they have a whole section of various types of vinegar.
