Kent’s Sicilian Summer Stew Recipe (A tasty Meatless / Vegetarian Meal Idea)

This is a use-up-the-veggies-left-in-your-garden kind of stew that goes well with the unseasonably cool August weekend we had here in Michigan. It’s great as a meatless / vegetarian meal idea, but would be good with beef or chicken, too! It had a nice blend of fresh summer flavors; it was baked for just the right amount of time so the veggies were not hard or mushy and the flavors of the herbs came through well; the feta cheese on top gave it an extra burst of delicious flavor; AND it only took a few minutes to pull together…

Creamy Lime Dressing for a Tasty Tomato Cucumber Salad

Are you sick of my new salad recipes yet? A neighbor brought us some beautiful yellow tomatoes, so I threw this together using those and our grape tomatoes and cucumbers from the garden. I loved the citrus flavor in the creamy dressing – this would be a good lettuce salad dressing, too.

Recipe for Fried Fish with Fresh Lemon Garlic Pesto (No Carbs!)

Kent & I worked together on this fish recipe today and both agreed that it was the best fish we’ve ever had, including what we’ve eaten in restaurants. This is quite amazing, considering we only just recently began eating more fish, and whenever we tried it in the past, I always bombed miserably.
