Here’s another great way to use some of those delicious veggies from your garden or the farm market this summer. This is so fast and simple, I almost didn’t post it because most people probably already make something similar. If you do, just move on to the next post! This is something I might throw together for my own quick lunch after the kids are fed and off playing. Sometimes the kids would be willing to eat this (and we could use it for a quick dinner), but not often…I envy the Moms out there whose kids eat veggies without complaint. Although, thankfully, I really have found that the more you offer them, familiarity does help things along!

Pasta & Veggie Stir Fry
I threw a handful of cold leftover organic whole-wheat spaghetti (from dinner the night before) into my cast iron pan with a couple tablespoons of butter. (Use rice pasta if you have gluten issues or if you’re concerned about the phytic acid in the pasta. I had some whole-wheat to use up.) In the meantime, chop whatever veggies you have on hand. Today I chopped up some patty pan squash and cherry tomatoes from Earthkeeper farm – yum. I sprinkled on sea salt, a little pepper, and a little garlic powder. Stir-fry it around ’til hot, and then it’s time to eat. Love it!

Thanks for the inspiration! I’m out of meat, and trying to hold off until I get to the farm on Wed…. which means that I needed a couple vegetarian nights….. I’m going to do a veggie stir fry tonight, and curried lentils and rice tomorrow!

My kiddos don’t necessarily eat their veggies without complaint, but they sure seem to have a better attitude when it’s “dessert night”, which is usually Fridays in our home. And, it’s usually a dead give-away that it’s a surprise “dessert night” when they see some new interesting vegetarian main or side dish. I’ve been amazed at what they are willing to eat…try kale, kohlrabi, loads of garlic and ginger, etc…not stuff they would normally enjoy.

Once a week dessert is a good idea – we have friends who give dessert (or some treat) every night, and yes, their kids eat veggies great, but I didn’t want my kids to expect something sweet after dinner every single night. Once a week would be good though, then we can introduce new things on that night…
